These tuna salad cups are a brilliant marriage of BLT and tuna salad while being keto and gluten-free! These will serve 8.

- 4 strips cooked Bacon, cut into small pieces
- 2 5-ounce cans Tuna
- 16Â Bibb lettuce, leaves
- 1 stalk Celery, cut into small pieces
- 1/4 tsp Lemon zest
- 2 Scallions, cut into small pieces
- 1Â Tomato, halved and cut into 8 slices, medium
- 4 Large hard-boiled eggs, cut into small pieces
- 1Â Kosher salt and freshly ground black pepper
- 2 tbsp Sour cream
Method
- In a bowl mix the bacon, tuna, celery, lemon zest, 2 scallions, tomato, eggs, salt and sour cream
- Put the tuna-BLT mixture in the 16 Bibb lettuce leaves
