Chicken and avocado are a great combination and these tacos really show off their flavors in a great light. These are gluten free and yield 4 servings.

- 6 1 1/4 pounds skinless, boneless chicken thighs, skinless boneless
- 1 Avocado
- 1 bunch Cilantro, leaves
- 1 14-ounce can Hearts of palm
- 1 Lettuce and/or diced red onion
- 2 Limes, Juice of
- 6 Radishes
- 1 cup Salsa, jarred
- 1 Kosher salt and freshly ground pepper
- 1/4 cup Vegetable oil
- 16 Corn tortillas
- 1/4 cup Sour cream
Method
- Cook the cut up chicken thighs in a medium-heat pan with the oil, season with salt and pepper to taste
- Cut up your avocado, cilantro, hearts of palm, lettuce and/or onion, the juice of 2 limes, 6 raddishes and then mix in a bowl to make a guacamole
- Dish up the tacos with the chicken, guacamole, salsa and sour cream
