This unbelievably easy, two-ingredient roasted tomato dip is a great addition to any shindig or get-together. It takes 45 minutes to make and serves 8.

 

INGREDIENTS

  • 5-6 medium tomatoes
  • 4 oz goat cheese (chèvre)
  • a pinch of sea salt

INSTRUCTIONS

  1. Preheat oven to 350º.
  2. Spray a baking sheet with oil. Place the tomatoes on the pan and roast for 40 minutes or until tender.
  3. Add tomatoes to a blender and pulse until liquified. Add goat cheese and salt. Pulse again until combined and creamy.
  4. If the dip is too liquid, add more goat cheese to reach desired consistency.
