This delicious, gluten-free tex-mex chicken quinoa bowl (wow, what storm of hyphens!) is a perfect dish for 1. Dishes like these are incredibly easy if you have ingredients, such as cooked chicken, prepped in your fridge.
Ingredients- 1/2 cup Chicken, cooked
- 1/4 cup Black beans
- 1/4 cup Red onion
- 2 tbsp Salsa
- 1/2 cup Quinoa, cooked
- 1/4 tsp Chili powder
- 1 Salt and freshly ground black pepper
- 1 tsp Olive oil
- 1/2 tsp Cumin, ground
Simply mix all the ingredients together in a bowl and enjoy!
