These tuna salad cups are a brilliant marriage of BLT and tuna salad while being keto and gluten-free! These will serve 8.
11 ingredients
4 strips cooked Bacon, cut into small pieces
2 5-ounce cans Tuna
16 Bibb lettuce, leaves
1 stalk Celery, cut into small pieces
1/4 tsp Lemon zest
2 Scallions, cut into small pieces
1 Tomato, halved and cut into 8 slices, medium
4 Large hard-boiled eggs, cut into small pieces
1 Kosher salt and freshly ground black pepper
2 tbsp Sour cream
Method
In a bowl mix the bacon, tuna, celery, lemon zest, 2 scallions, tomato, eggs, salt and sour cream
Put the tuna-BLT mixture in the 16 Bibb lettuce leaves
Enjoy!
